What’s your favorite nakji dish?

Ingredients

    • nakji (small octopus) – 1ea
    • anchovy broth (or make your own with anchovy, dry kelps, onion) – 3 cups
    • cooked short grain rice – 400g
    • gimchi – 100g 
    • Korean red pepper, coarsely ground – 1 tbs (optional)
    • anchovy sauce – 1 tsp
    • olive oil 1 tbs
    • sesame seed oil – 1 tbs
    • soup soy source – 1 tsp
    • roasted sesame seeds – 1 pinch
    • roasted gim (optional)
    • 부추\green onion to taste

Prep & Cooking:

  • Prep:
    • clean nakji (small octopus) throughly with coarse salt and flour 
    • chop onion
    • chop Korean chives or green onion
    • chop kimchi
  • Cooking:
    1. Add anchovy, dry kelps, onion (or use anchovy broth tablet)
    2. Remove anchovy, dry kelps, and onion after 20m
    3. In the boiling broth, blanch nakji for about 30 seconds when nakji turn light pink  TIP> over cooking makes the nakji hard to chew
    4. Remove and chop nakji into small bite sizes +-3cm 
    5. Set a side the broth
    6. In a heated pan, add olive oil, gimchi, and onion 
    7. When onion and gimchi are translucent, add anchovy broth and pre-cooked rice in high heat. Add more water as necessary.
    8. Add coarsely ground Korean red pepper (optional)
    9. Add soup soy sauce
    10. Add anchovy sauce
    11. Add roasted sesame oil
    12. When rice softens, add nakji and reduce heat to low
    13.  Simmer for 3 minutes
    14. Add Korean chives and simmer for another minute
    15. Add roasted sesame seeds and roasted gim (seaweed) for flavor before serving
