Spicy, Zesty, and Comforting!
Gimchi Bean Sprout (kong-namul) Gukbab was mum’s favorite. It is so simple and easy to make, yet has a surprisingly delicious gimchi zesty kick to it. If you are feeling under the weather or a bit rough after a night out, this is it! With a kick of gimchi and the satisfying crunchness of bean sprouts, this zesty soup will have you feeling human again in no time. This simple soup is a family favorite for a reason. Kong-namul (Korean bean sprout) contain nutrients such as rich dietary fiber, vitamins (C, B group), and aspartic acid. Boosts immunity, relieves hangovers, improves constipation, prevents anemia, improves skin, detoxifies the liver, and prevents high blood pressure. It’s low in calories and rich in protein, making it suitable for dieting, and it also has a positive effect on bone health and muscle building.
Ingredients
- Well-ripened gimchi: 4 oz
- Gimchi juice: 1 oz
- Korean bean sprouts (kong-namul): 4 oz
- Leftover short-grain rice: 6 oz
- Coarsely ground Korean red pepper: 1 tsp
- Salt: 1 pinch
- Green onion: 2 Tbs,
- Anchovy broth: (optional: anchovy/clam stock tablet)
- Anchovy (myeol-chi): 4 ea
- Dried kelp (dasima): 0.3 oz
Prep & Cooking:
- Prep: 3 minutes
- Thoroughly wash and strain the soy bean sprouts.
- Chop gimchi into 3/8″ square.
- Cooking: 13 minutes with out broth

- Broth: 30m – 1hr (store in refrigerator or use “anchovy/clam stock tablet)
- Add 4 cups of water, anchovy, and kelp. Boil for 20m
- Then simmer it for 20m. Add additional water if necessary. TIP1> It’s ready when anchovies float to top.
- Add chopped gimchi and red peppers. Boil it for 3 minutes for a bit of crunchness.
- Add bean sprouts and boil it for 7 minutes on medium high. TIP2> Do not put the lid on and off. It might smell fishy if the timing is off. TIP3> Cook until a bit of crunchiness remain, however, under cooked soybean sprouts will smell.
- Add a pinch of salt to taste.
